So I am back home after 5 days in Las Vegas and my family missed me, but I think they missed the home-cooked meals more!
Ari and I were back in the kitchen today and I have to say I was so proud of this recipe choice he made. For a kid who lived on Taco Bell and junk food…to hear him suggest this healthy dessert was a proud moment for me. We started cooking together for so many reasons, but at the top of the list was eating healthier.
He is down over 20 pounds since we started drinking shakes and cleanse in the morning and eating our healthy recipes!
It’s funny to think that the thing we argued about most often (all the time)–what he was eating–is what has brought us together!

- 2 ripe avocados
- 1 can coconut milk
- Juice and zest of 1 lime
- 1/4 cup honey
- shredded coconut
Ingredients

- Peel and chop avocados and place in blender with coconut milk, lime juice, lime zest, and honey.
- Blend until smooth.
- Pour into a freezer proof pan and freeze until set, or for best results, put in an ice cream maker and churn for 20 min or until the mixture is the consistency of ice cream.
- Scoop into bowls and top with a little lime zest and shredded coconut. Enjoy!
