Ingredients
  • 1cup uncooked quinoa
  • 2cups chicken stock
  • 2 medium sized gala appleschopped
  • 1/2cup slivered almondstoasted
  • 3 scallionsgreen parts sliced
  • 2 stalks celerysliced
  • 1/4cup extra virgin olive oil
  • 2tbs. apple cider vinegar
  • 1tsp. honey
  • 1clove garlicminced
  • 1/2tsp. salt
  • 1/4tsp. pepper
Instructions
  1. Bring quinoa and chicken stock to a boil in a medium-size saucepan. Cover and simmer until all liquid is absorbed, 15-20 minutes. Let sit and cool completely.
  2. Mix all salad ingredients with quinoa.
  3. Whisk dressing ingredients together. Pour over salad and toss.
  4. Enjoy!
