It’s been more than a year since we started cooking together. This is BIG and something to celebrate! This past Friday was the first time that Ari actually asked me to cook with him! That pretty much says it all. We’ve gone from having an adversarial relationship (that is putting it mildly) to being not just a mom and son, but friends.

When we first started, it felt like we were smiling for the camera. The hour together was fine, with a mutual goal of putting together a meal, but as soon as the task was done we retreated to our original corners, assumed our old attitudes and practiced conversation patterns. We were hopeful, but not believers. What can I say? A year of pretending, and gradually moving in the right direction is what got us to where we are today. We truly have something to celebrate and I want to thank everyone that joins us each week or whenever. We feel you cheering us on! The support and love has been incredible.

Celebrating 1 Year with Frozen Pina Coladas, Shrimp and Pineapple Skewers!

Ingredients
Frozen Pina Coladas
  • 1 cup frozen pineapple
  • 1 1/2 cups crushed ice
  • 2 oz coconut cream
  • 1 1/2 oz light rum
  • 1 oz dark rum
  • splash of coconut milk
Shrimp Skewers with Grilled Pineapple
  • 1 lb raw shrimp peeled
  • 1 cup fresh pineapple cut into cubes
  • 3 tbs olive oil
  • 1 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp allspice
  • 1 tsp chili powder
  • 4 inch " wooden skewers soaked in water for 15 minutes

  • 1 cup frozen pineapple
  • 1 1/2 cups crushed ice
  • 2 oz coconut cream
  • 1 1/2 oz light rum
  • 1 oz dark rum
  • splash of coconut milk

  • 1 lb raw shrimp peeled
  • 1 cup fresh pineapple cut into cubes
  • 3 tbs olive oil
  • 1 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp allspice
  • 1 tsp chili powder
  • 4 inch " wooden skewers soaked in water for 15 minutes
Instructions
Frozen Pina Coladas
  1. Put all ingredients in blender and blend. Yummy!
Shrimp Skewers with Grilled Pineapple
  1. Mix olive oil with spices.
  2. Toss shrimp with spice mixture.
  3. Place a shrimp and a cube of pineapple on each skewer.
  4. Grill in a cast iron skillet or on a grill for 2-3 minutes a side.
