Cod with Kalamata and Green Olives in Lemon Sauce!

Ingredients
  • 4 6-oz pieces cod
  • 1/2cup kalamata olives
  • 1/2cup green olives
  • 1 lemon
  • 3tbs butter
  • 3tbs olive oil
Instructions
  1. Heat butter and olive oil over med-high heat in a skillet until butter is melted.
  2. Sprinkle fish with salt.
  3. Place fish in the pan and cook for 3 min until brown on bottom.
  4. Flip over and cook 3 min more.
  5. Chop olives and put in the pan.
  6. Squeeze juice of the lemon into the pan.
  7. Cook for 3 min or until fish is done.
  8. Serve fish over pasta.
  9. Spoon sauce with olives over fish.
Greens
  1. To add greens, sauté your favorite mix of kale, and spinach in a tsp of olive oil and a chopped clove of garlic for a couple minutes, just until greens turn vibrant in color.
  2. Season with salt. They’re delicious with the extra sauce. Enjoy!
