Ingredients
Double Chocolate Macaroons
  • 2/3cup sugar
  • 1/4cup cocoa
  • 3 large egg whites
  • 1/4tsp salt
  • 1tsp vanilla extract
  • 1cup sweetened shredded coconut
  • 1 1/2cup unsweetened shredded coconut
  • 1cup bittersweet or semisweet chocolate chips
Coconut Almond Macaroons
  • 2/3cup sugar
  • 1/2cup sliced almonds
  • 3 large egg whites
  • 1/4tsp salt
  • 1tsp vanilla extract
  • 1/2tsp almond extract
  • 1 1/2cups unsweetened shredded coconut
  • 1cup sweetened shredded coconut
Instructions
  1. In large bowl, whisk sugar with cocoa or almonds until combined.
  2. Stir in egg whites, salt, extract(s).
  3. Fold in coconut. If making Double Chocolate Macaroons, fold in chocolate chips too.
  4. Adjust oven rack to upper-middle position and lower-middle position and preheat oven to 350 deg.
  5. Line two baking sheets with parchment paper and lightly grease with cooking spray.
  6. Spoon a generous tbs of batter onto parchment paper for each cookie. Press gently and form into a mound.
  7. Continue with the rest of the batter spacing cookies 2″ apart.
  8. Bake until set about 15 minutes.
  9. Remove from the oven and let cool on pan 10 minutes, and then transfer to a wire rack. Enjoy!
