Ingredients
  • 2tsp. olive oil
  • 1lb. ground chicken, turkey, or pork
  • 3heaping tbs hoisin sauce​
  • 2tbs. soy sauce
  • 1tbs. rice vinegar
  • 1inch piece fresh gingerpeeled and chopped
  • 2cloves garlicchopped
  • juice of half a lime
  • 4 button mushroomsdiced in small pieces
  • 4oz. water chestnutsdiced in small pieces
  • 1/4cup roasted peanutswithout skins, chopped
  • 2 green onionssliced thin
  • Boston or Bibb lettuce leaves
  • 1 carrotshredded
  • fresh cilantrochopped
  • Sriracha sauceoptional
Instructions
  1. In a frying pan heat the oil over medium-high heat. Add the turkey, chicken, or pork to the pan. Stir every few minutes, breaking up large chunks, until almost cooked through.
  2. Stir in hoisin sauce, soy sauce, rice vinegar, ginger, garlic, and lime juice. Cook for 2 more minutes.
  3. Stir in mushrooms, water chestnuts, peanuts, and green onions. Cook for another 2 minutes.​
  4. Spoon into lettuce leaves and top with shredded carrot, cilantro, and a few dashes of Sriracha sauce.
  5. Yum! And so easy!
