Ingredients
  • 2 1/2lbs. boneless chickenthighs or breasts
  • 1 1/2large onionschopped
  • 1 1/2inch fresh gingerpeeled and chopped
  • 8large garlic clovespeeled and chopped
  • 1 green chili pepper
  • 1/2cup canola oil
  • 2tbs. coriander
  • 1 tbs. cumin
  • 1tbs. turmeric
  • 1tsp. cayenne peppermore if you like it hot!
  • 1/2cup plain yogurt
  • 1cup water
  • 115 oz. can crushed tomatoes
  • 2tsp. salt
  • 1tsp. garam masala
  • 1/4cup fresh cilantrochopped
Instructions
  1. Cut the chicken into bite-size pieces.
  2. In a food processor add ginger, garlic, and green chili pepper and process until a fine dice.
  3. Add oil to a large and deep non-stick pot. Heat over medium-high heat. When hot, add the chopped onions. Sauté until they start to turn brown.
  4. Add the ginger/garlic mixture to the pot and stir for 2-3 minutes until golden brown.
  5. Add the spices, stirring to combine with the onions, ginger, and garlic.
  6. Add the chicken pieces and stir to combine.
  7. Add the yogurt, water, tomatoes, and salt. Bring to a simmer. Cover and cook for 20 minutes.
  8. Sprinkle on the garam masala and fresh cilantro. Mix to combine. Cook uncovered until the curry is the consistency of a thick stew.
