Ingredients
  • 46-oz salmon filets
  • 2 tbs. olive oil
  • 2 lemonsjuiced (1/4 cup)
  • 2-3cloves garlicminced
  • 2tbs. fresh oreganochopped (or 2 tsp dried oregano)
  • 1tsp. salt
  • 1/2tsp. pepper
  • 10 grape tomatoes
  • 1/2cup kalamata oliveschopped
  • butter and olive oil for frying
Instructions
  1. Mix marinade ingredients – olive oil, lemon juice, oregano, garlic, salt and pepper together in a rimmed dish. Stir to combine.
  2. Place the salmon fillets in the marinade, turning to coat. Set aside for 30 minutes. (You can make the warm kale salad while you are waiting.)
  3. When 30 minutes is up, heat 2 tbs of butter and 2 tbs of olive oil in a non-stick frying pan over medium-high heat. When sizzling, add salmon fillets face up (if they have skin). Cook for 3-4 minutes a side depending on thickness. (1″ for 3 min, 1 1/2″ for 4 min). Remove salmon to a plate. Cover with foil and keep warm.
  4. Add a tbs of olive oil to the pan. When hot, add the grape tomatoes and chopped Kalamata olives. Sauté over medium-high heat, stirring occasionally to rotate tomatoes. They are done when the grape tomatoes are slightly shriveled on all sides.
  5. Serve each salmon fillet topped with tomatoes and olives, a side of warm Kale Salad, and tzatziki sauce.
