When 30 minutes is up, heat 2 tbs of butter and 2 tbs of olive oil in a non-stick frying pan over medium-high heat. When sizzling, add salmon fillets face up (if they have skin). Cook for 3-4 minutes a side depending on thickness. (1″ for 3 min, 1 1/2″ for 4 min). Remove salmon to a plate. Cover with foil and keep warm.
