It’s always fun to bake around the holidays! A little extra togetherness, the smell of cookies in the house, a little extra warmth from the oven, and the good feelings of sharing something that is homemade.
This week we baked for the employee cookie swap at Ari’s work. He picked Peppermint White Chocolate Chip Cookies, which are soooo delicious!! They are festive, with red and white striped candy cane pieces sprinkled throughout and soft and gooey right out of the oven. I am not a huge fan of white chocolate and these were still really really yummy!

Peppermint White Chocolate Cookies!
Ingredients
- 1 cup butter softened
- 1 cup sugar
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 3 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups white chocolate chips
- 1 cup candy canes crushed
Ingredients
- 1 cup butter softened
- 1 cup sugar
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 3 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups white chocolate chips
- 1 cup candy canes crushed

Instructions
Cream the butter until light. Add sugars until well blended. Beat in the vanilla and eggs.
Stir together flour, baking soda, and salt. Gradually add to butter mixture blending well.
Stir in white chocolate and candy canes.
Line cookie sheets with parchment paper.
Drop a tbs of dough onto the cookie sheets, 2" apart. (Roll each cookie in your hands if you want them to look more uniform.)
Bake at 375 deg for 12-15 min until golden brown.

And if you take them out too early don't dump them on the counter! ha! That's what we did.
Cool on wire racks. Makes 5 dozen.
