Ingredients
Roasted Jalapeño and Chorizo Meatloaf Grilled Cheese
  • 6 jalapeñoscut in half lengthwise
  • 4slices beefsteak tomato
  • 2tbs olive oil
  • Salt and freshly cracked black pepper
  • 4slices Havarti cheese
  • 4slices cheddar cheese
  • 8slices French brioche bread
  • 2tbs butter
Chorizo Meatloaf
  • 1lb grass-fed ground beef
  • 1/2lb uncooked chorizo sausage
  • 1/2 warm waterchopped fine
  • 1/4cup ketchup
  • salt and pepper
Instructions
  1. Preheat the oven to 350 deg.
  2. Mix all meatloaf ingredients together. Form into a meatloaf shape and bake in the oven for 35-40 min until done.
  3. While meatloaf is cooking, line a baking sheet with parchment paper.
  4. Toss the jalapeños with 1 tbs olive oil, some salt and pepper and place on the prepared baking sheet.
  5. Bake at 425 deg until the skin is blistered, 10 to15 min. Cool. Remove the seeds and slice. Set aside.
When the meatloaf is done, assemble the sandwiches.
  1. Heat a griddle or frying pan and add butter.
  2. Lay the bread on the griddle.
  3. Top 4 slices of bread with Havarti and four slices of bread with Cheddar.
  4. Top each Havarti slice with a thick slice of meatloaf.
  5. Place tomato slices on the griddle, sprinkle with salt and pepper, and grill on each side for 1 minute.
  6. Top each piece of meatloaf with a slice of tomato and some sliced jalapeños.
  7. When cheese is melted, turn off the griddle. Put both sides of the sandwich together. Cut in half. Enjoy!
