Spicy Chilled Watermelon and Cucumber Soup

Ingredients
  • 6 cups watermelon diced
  • 1 jalapeño seeded and diced
  • 2 green onions sliced
  • 1 lime juice and zest
  • 1/2 cup mint leaves chopped
  • 1 tsp honey
  • 2 tbs rice wine vinegar
  • salt and pepper
  • 1/2 cucumber peeled and diced

  • 6 cups watermelon diced
  • 1 jalapeño seeded and diced
  • 2 green onions sliced
  • 1 lime juice and zest
  • 1/2 cup mint leaves chopped
  • 1 tsp honey
  • 2 tbs rice wine vinegar
  • salt and pepper
  • 1/2 cucumber peeled and diced
Instructions
  1. Blend all ingredients except cucumber until smooth.
  2. Stir in cucumber.
  3. Chill for 1 hour.
  4. Serve garnished with mint leaves, a few small chunks of watermelon and a couple jalapeño slices.
  5. Enjoy!
