Not a great way to start his birthday. We had a big argument in the grocery store (neither of us could stop) while shopping for the ingredients for these appetizers and his birthday dinner. Shame on me. It was his birthday. We are just too much alike sometimes! We both think we’re right. Does anybody else butt heads with their kids? We’re working on it.

Using communication skills that we learned by working together in the kitchen, we were able to bring the intensity down. All those good feelings stored up from working and sharing and laughing together every week, helped us see that we really didn’t want to be fighting. Even though we were arguing, I could feel that we were both trying to get back to a place of mutual understanding and respect, that our relationship was more important. Before, it would have just escalated out of control. Neither of us are proud of that, but it is true.

Well, it was all good in the end. The rest of the day went smoothly. A trip to the gym helped blow off some steam. Lunch with his girlfriend and her family was a treat. And then we had a relaxed and fun celebration with his friends in the evening and a small feast for dinner. Ice cream sundaes for dessert ensured smiles on this special day!

Weston just joined us for the picture, arriving just as we were finishing up. Look for him in future posts. He is looking forward to cooking with us sometime soon!

 

Happy Birthday again Ari!

Everybody has a Guacamole recipe. Here is ours. And the Mango Salsa recipe too. They are very easy to make at the same time as they have a lot of the same ingredients–popping with flavor from lime, cilantro, and chili peppers. Both delicious!

Ingredients
Guacamole
  • 3 avocados peeled and chopped
  • 2 roma tomatoes chopped
  • 1/2 small red onion chopped
  • juice of 1 lime
  • 1/2 Serrano or jalapeño chile pepper seeded and chopped fine (optional)
  • 1/3 cup chopped fresh cilantro
  • 1 tsp salt
  • black pepper
Mango Salsa
  • 2 mangos peeled and chopped
  • 1/2 red bell pepper chopped
  • 1/4 small red onion chopped
  • juice of 1 lime
  • 1/4 Serrano chile pepper seeded and chopped fine
  • 1/3 cup chopped fresh cilantro
  • 1/2 tsp salt

Instructions
  1. Guacamole - Mash the avocados in a bowl and combine with other ingredients. Serve with tortilla chips (or eat it with a spoon right out of the bowl).
  2. Mango Salsa - Combine all ingredients. Serve with tortilla chips (or eat it with a spoon right out of the bowl).
