Ingredients
  • 1tbs. olive oil
  • 1bunch kalestems removed
  • 2cloves garlicminced
  • 6 mushroomssliced
  • 1/2 red bell pepperseeded and chopped
  • 1/2 onionchopped
  • 1tbs. balsamic vinegar
  • 1/2tsp. salt
  • 1/4tsp. pepper
  • 1/4cup pine nutstoasted
  • 1/4cup kalamata oliveschopped
Instructions
  1. Cut up the kale into small strips or pieces.
  2. Heat 1 tbs olive oil in a deep frying pan over medium-high heat. Add the garlic and sauté for 1 minute until golden brown.
  3. Add the onion, red bell pepper, and mushrooms and sauté for 3 minutes.
  4. Add kale to the pan and stir to mix well with other vegetables. Cook for 2 more minutes until kale is wilted.
  5. Add balsamic vinegar, salt and pepper. Stir to combine.
  6. Turn off the heat. Stir in toasted pine nuts and Kalamata olives and serve.
  7. Enjoy!
